I made broccoli cauliflower rice and chicken casserole

Oh man was that delicious. I may go back for seconds. It was creamy yet light. It was also toddler approved. He ate a lot of everything which I’m super proud and surprised about. My son only has a few pieces of chicken left on his plate. That never happens!! I’ll definitely be making this dish again!!
